Peach Ice Tea Butter

Peach Ice Tea Butter is as refreshing as a cold glass of peach ice tea in the summertime!

This past weekend we went peach picking at a local farm, and picked 22 pounds of peaches! There is just something extra sweet about peaches right off the tree. When I was trying to figure out all the yummy things to make with our fresh peaches I knew I wanted to make fresh peach ice tea. Peach ice tea is a staple in our house, but it always tastes the best with fresh picked peaches. Thats when I had the idea of making peach ice tea butter that we could enjoy any time of the year.

Traditional peach butter is made with fresh peaches, sugar and water, with my southern twist you replace the water with fresh brewed ice tea and it transforms peach butter it to a refreshing spread!

To get started I made my tea. In a mason jar I measured out a cup and a half of hot water and steeped my tea bag for the directed amount of time. You can use whatever tea you would like, I used my favorite black tea.

Before I measured out my peaches I blanched them with the same method I used when making my Simple Peach Syrup. Then tearing the peaches into large chunks. You can cut them if you would prefer, but for me, my hands were already sticky and messy and it was easier to just pull the fresh peaches apart. I used donut peaches, which are named because of their shape. You can use what ever kind of peaches you would like!

Once I measured out six pounds of peaches I placed them in a large pot to begin the cooking process. To the peaches I added the ice tea, sugar and lime juice.

After cooking for 20 minutes I transferred the peaches and liquid to a large heat safe bowl, so that I could blend my mixture in small batches before returning it to the pot and bringing it to a boil.

Once your cans have been sealed with a hot bath they are ready to store or enjoy! If your new to canning I highly recommend a simple canning utensil kit*, the wide mouth funnel is amazing! Ingredients
  1. 6 Pounds Fresh Pealed and Pitted Peaches
  2. 1 1/2 Cup Sugar
  3. 1 1/2 Ice Tea
  4. Juice of 2 Limes
Instructions
  1. Peel, pit, and cut your fresh peaches into chunks. I recommend peeling the peaches by blanching them.
  2. Place your peach chunks in a large pot over medium heat. Add ice tea, sugar and lime juice. Allow peaches to cook at a gentle simmer for at least 20 minutes, stirring occasionally. Once your peaches are tender, turn off the stove and pour the peaches and liquid into a large heat safe bowl.
  3. The next couple steps you want to do in small batches. Add a small amount of your peaches and liquid to a blender and blend on high for 30-60 seconds. You want to make sure you blend out all the lumps! Once your mixture is smooth and lump free you can return the mixture to your large pot. I recommend pouring the mixture through a mesh strainer, to make sure to get out any leftover chunks. Repeat these steps until all of your peaches and liquids have been blended and are returned to the pot.
  4. Turn the stove back on, to a medium high heat and bring your peach mixture to a boil. Cook for 35-40minutes, stirring often to avoid having your peach butter burn onto the bottom of the pot. Your peach butter should thicken up while it cooks down.
  5. Pour your mixture into your prepared mason jars, leaving an inch at the top. When putting the lids on make sure to tighten them. Then to seal your mason jars you will need to put them in a hot bath from 10minutes.
  6. Peach ice tea butter will continue to thicken as it cools!

  1. What a cool idea to do a tea and peach butter! I would love to know what it tastes like! It will be great with some freshly baked scones. The peaches are so sweet and gorgeous right now. I would love to go pick peaches too! I wonder whether they have those in Los Angeles. 🙂
