 Strawberry Peach Freezer Jam! 

I love fresh strawberries and peaches. They just remind me so much of summer time, their mix of sweet and juicy makes for the perfect jam. One thing I just love about freezer jam is that it is easy to make, and easy to store. You just make it, and keep it in your freezer until you are ready to enjoy! 

All you need to make strawberry peach freezer jam is; strawberries (I recommend fresh picked because they have the most flavor), peaches, water, a package of sure jell, sugar, some fresh squeezed lime juice and containers for storage. You will also need a masher of sorts to mash up your fruit. I personally like large pieces of fruit in my jam, so a mojito muddler* works best for me. You can use just about anything to mash up your fruit, including your hands!

    Ingredients
    1. 3 cups mashed strawberries
    2. 1 cup mashed peaches
    3. 3 cups sugar
    4. 2 Tbls fresh squeezed lime juice
    5. 1 cup water
    6. 1 packet of Sure Jell
    7. Plastic containers with a good sealing lid (this recipe will make 6-7 cups of jam-I used 2-2 cup containers, 2-1 cup containers and I had enough extra to fill 1/2 of another 1 cup container)
    Instructions
    1. Mash cleaned strawberries and peaches. For this I used a mojito masher, but any type of masher will work well. Just remember you want you jam to have nice big lumps of delicious fruit!
    2. Mix the mashed strawberries and peaches along with the fresh squeezed lime juice and set off to the side.
    3. In a large saucepan mix your sugar and sure jell together.
    4. Turn on the stove to a medium heat and add the water.
    5. Stir constantly until mixture comes to a hard boil and you have allowed it to boil for one minute.
    6. Remove from heat and stir in your fruit mixture from earlier and pour into empty containers.
    7. Seal the containers and allow to cool at room temperature for 24hours before placing them in the freezer.
    Notes
    1. When moving jam from freezer to enjoy, place directly into the refrigerator to thaw.

Make sure you start with cleaning your fruit before you start mashing away. I cleaned and removed the steams of my strawberries before starting, and since I was using peached I canned the previous year all I had to do was open my jar and mash away!                    IMG_5169

Then just mix your mashed strawberries and peaches together. This is also when you are going to want to add the fresh squeezed lime juice to help preserve the beautiful color of your fruit. I prefer lime juice over lemon, just because I like the flavor it adds to the jam. If you are a bigger fan of lemon feel free to substitute fresh squeezed lime juice for fresh squeezed lemon juice!

To prepare the sure-jell, you just mix the packed of sure-jell and sugar together in a large sauce pan, then add your water and turn up the heat. Cook the mixture over a medium high heat, stirring continuously until it comes to a hard or rolling boil. Allow to boil for one full minute before removing from the heat.

Remove mixture from heat, stir in the fruit, and quickly poor into your freezer safe plastic containers. Don’t forget to make sure the lids are nice and secure. IMG_5184

Let the jam sit out for 24 hours at room temperature or until it becomes firm. Then you can place them in the freezer. The jam is good for up to 1 year in the freezer-just remember to let it thaw in the refrigerator. I always place one of the containers directly in the fridge to enjoy right away-that container is good for up to 3 weeks!

    I make freezer jam with sure jell but usually it says to add the sugar straight into the fruit and then make the pectin separately (3/4 c. water, boil) and then add to the fruit/sugar mixture. Is that a different type of sure jell that you are using or can I do your process with the stuff I use even though it is a departure from what the directions normally say for easy freezer jam? Thanks!

      This particular time I used the sure jell that comes in the pink package, however I have made it with regular sure jell before. I altered a recipe I already had, so I never even read the directions in the sure jell…so I would think you could just follow these steps and you wouldn’t have to process them separately!

        I used your recipe yesterday and it was delicious! The recipe and directions were great, I would just note for other readers that this is the reduced sugar Sure Jell (pink box). I had only previously used the regular version but the reduced sugar was great so I will use it more! In any case, thank you so much for sharing your wonderful recipe!
