Strawberry Mojitos

These delicious strawberry mojitos are made with my homemade strawberry mint syrup!

My husband and I love mojitos, they are the go to drink of summer. This summer I decided we needed to explore some new tastes and make some summer sweet flavored mojitos! I used the fresh strawberries that I had the opportunity to pick myself a few weeks ago and made a minty sweet syrup! You can find the recipes for both the strawberry mojito and the strawberry mint syrup bellow!

Anytime you make mojitos you should always start with mulling the mint and lime together. Since there is a trace of mint in the syrup as well you want to mull 2 mint leaves with your slice of lime. Then add the strawberry mint syrup. Add ice to the glass. Finally top with lemon lime soda (or club soda) and a sprig of mint! Now sit back relax and enjoy this minty sweet drink!

Fresh strawberry mojitos made with homemade strawberry mint sauce is the perfect summer drink!

Ingredients
  1. Strawberry Mint Syrup
  2. 2-3 Mint Leaves
  3. Sliced Limes
  4. Lemon Lime Soda
  5. Rum
Instructions
  1. Mull 2 mint leaves with a slice of lime in the bottom of your drinking glass.
  2. Add 2 Tablespoons of fresh made strawberry mint syrup.
  3. Add 1oz Rum.
  4. Fill glass with ice.
  5. Top with lemon lime soda.
  6. Stir lightly.
  7. Garnish with a fresh spring of mint.
To make the strawberry mint syrup
  1. Start with blending 2 cups of fresh strawberries. Pour the mixture into a medium size sauce pot, and add 2 mint leaves, 1/4 cup of water, and 1/2 cup of sugar. Cook over a medium high heat, bringing to a simmer. Allow to simmer for 10 minutes. Remove mint leaves after the mixture is cool. Then you can store the syrup in a mason jar in the refrigerator!

 Strawberry Mint Syrup 

To make the strawberry mint syrup you want to start by washing and removing the tops of your strawberries. In a blender, blend two cups of fresh strawberries. Then pour strawberry liquid into a medium pot and turn the stove to a medium high heat. Add fresh mint, 1/4 cup of  water and 1/2 cup of sugar. Bring to a low simmer and allow to simmer for ten minutes. Remove mint leaves after the mixture is cool. Then you can store the syrup in a mason jar in the refrigerator!
