Spreadable Pesto

Pesto can now be your favorite condiment!

Who doesn’t love a good Pesto? Traditional Pesto is made with basil, garlic, pine nuts, extra virgin olive oil, percorino cheese, and salt and pepper. My spreadable pesto is far from traditional. If you haven’t figured it out already, I love to transform traditional recipes into something new. Just check out my Peach Ice Tea Butter where I mixed the idea of traditional peach butter with the souther sweetness of fresh brewed ice tea!

Pesto Paste

My spin on pesto includes: basil, garlic, almond butter, spinach, kale, extra virgin olive oil, salt and pepper, balsamic vinegar, and lemon juice. The almond butter adds a silky nutty aspect to the pesto and the lemon juice adds a touch of acidity. While the spinach and kale add an extra boost of green goodness! Spreadable pesto is so quick and easy to make. You can mix/chop/blend everything in your food processor and store it in your fridge in a mason jar. I can’t give you a definitive amount of time that the pesto will be good in the refrigerator for, because we have never had it last long enough to go bad!

 We keep a jar of spreadable pesto in our refrigerator all of the time. Spreadable pesto is just such a versatile condiment. It is delicious on sandwiches, burgers, tossed with fresh veggies to make pesto salad, as a dip, and so much more!

This twist on pesto is more like a paste, and goes great tossed with fresh veggies or as a spread on sandwiches!

Ingredients
  1. 2 oz Fresh Basil
  2. 2 oz Fresh Spinach
  3. 1 oz Fresh Kale
  4. 2 Tbsp. Almond Butter
  5. 2 Tbsp. Balsamic Vinegar
  6. 9-12 Tbsp. Extra Virgin Olive Oil (EVOO)
  7. 1-2 Cloves of Garlic
  8. Juice of 1 Lemon
  9. Salt & Pepper
Instructions
  1. In a food processor chop the basil along with 3 Tbsp. of EVOO.
  2. Add the almond butter, garlic, vinegar, lemon juice, and pinch of salt & pepper. Chop until fully mixed.
  3. Add Spinach and 3 Tbsp. of EVOO, chop until fully mixed.
  4. Add Kale and 3 Tbsp. of EVOO, chop until fully mixed.
  5. Once mixed you can add more salt and pepper to taste, and more EVOO one tablespoon at a time until it reached your desired consistency.

Some of our favorite ways to enjoy the spreadable pesto are

As a spread on sandwiches (especially BLTs), dip for fresh veggies, topping for veggie burgers, as a marinade for chicken, and as a spread for pita chips. The spreadable pesto also makes a great dressing for a fresh tomato salad. Just toss the pesto with fresh tomatoes and top with fresh grated parmesan cheese!
