Limoncello Buttercream Frosting

My Limoncello Buttercream Frosting brings two of my favorite things together, limoncello and frosting!

If you ask one of my fiends or family what I am good at baking they would certainly tell you, that I am good at adding booze to my sweet treats! I wish I had some wonderful story about how mixing booze and treats was simply a happy accident, but I honestly have no idea when or how it all started. Maybe that is a sign, that baking with booze will make you forget when you decided to start using booze in your baking recipes…

I am sure some of it, is simply because I prefer to use recipes as suggested guidelines, and not as steps to follow. There is a good chance one day I decided to make lemon frosting, but didn’t have lemons or lemon juice so I decided to just make limoncello frosting instead.

One of the down falls of my off the cuff cooking and baking is that I am rarely capable of recreating the exact recipe again. One recipe I am often asked the recipe for is my Limoncello Buttercream Frosting. So over the holiday weekend I decided not only would I make cupcakes with limoncello buttercream frosting, but I would also write down exactly how I did it, so I could finally share one of creations with my family, friends and all of you all!

Limoncello Buttercream Frosting
A deliciously tart boozy frosting!

Ingredients
  1. 3 1/2 cups confectioners sugar
  2. 1 cup butter (soft and cut into chunks)
  3. 1 teaspoon Limoncello
  4. 1/2 teaspoon vanilla extract
  5. 1 tablespoons whipping cream
Instructions
  1. In a stand mixer using the whisk attachment mix the confectioners sugar with the butter on a low speed.
  2. Once sugar and butter is well combined you can up the speed to medium.
  3. Allow to mix for 2-3 minutes.
  4. Add Limoncello and Vanilla.
  5. Mix for one minute.
  6. Add whipping cream and allow to mix for an additional minute.
Notes
  1. If you find your frosting too thick to spread add more limoncello or whipping cream.
  2. If you find your frosting too runny add more confectioners sugar, 1 Tablespoon at a time.
